Soft dark chocolate cookies and Earl Grey

These Earl Grey tea cookies will delight young and old. They are so comforting and delicious!

Here are the ingredients:

-300 g of dark chocolate 70%

-1/4 cup of tempered and softened butter

-2 eggs

-1/2 cup cane sugar

-1 Tablespoon Earl Grey Tea from BU by Esapce Tea

-1/4 cup of unbleached flour

-1/2 tsp baking powder

Here's how to do it:

Preheat oven to 180°C (350°F).

Using a spice grinder, reduce the tea to powder. If you do not have one, it is possible with the help of a rolling pin to do so.

In a water bath, melt the chocolate with the butter and tea powder.

In a separate bowl, using an electric mixer, beat the eggs with the sugar until the mixture turns pale and it becomes creamy.

Using a spatula, stir in the melted chocolate and vanilla into the egg mixture.

In a bowl, mix the flour with the baking powder. Stir in the dry ingredients in the chocolate mixture

Mix well until a smooth and firm paste is obtained.

It is suggested that you refrigerate this mixture for 30 to 45 minutes.

Install parchment paper on a baking sheet. To form small cookies, place about 1 tbsp of dough per cookie. -For medium size cookies, place 2 tbsp of dough per cookie. Space cookies 5 cm (2 in.) apart.

Bake for 8 to 12 minutes, depending on the size of the cookies

Remove from the oven and let cool on a rack.

For a beautiful presentation, you can add powdered sugar.
